We love loaded baked potatoes, and one day I decided to change up the toppings…
The usual cast of characters includes fat-free cottage cheese and chopped green onions, tomatoes, jalapeños and spinach. This glorious mountain of goodness is then decorated with freshly cracked peppercorns, preferably the colorful medley variety.
But one day I needed to clean out the refrigerator prior to a non RV-ing trip. This time, a sprinkle of cheddar hid out under the cottage cheese, followed by green onions, garlicky sautéed mushrooms and some thick kale and spinach pesto.
Oh, and that’s some sweet peaches and cream Indiana corn in the background! It was hand-delivered by the farmer and was oh, so good!
